Asparagus with “bolzanina” sauce


In order to breath some vacation air we propose you our spring RECIPE:
South Tyrolean asparagus with “bolzanina sauce”, homemade ham and salt potatoes.

Ingredients for 2 persons
1 kg white asparagus
30 g butter
2 eggs
1 teaspoon mustard
50 ml olive oil
1 lemon juice splash
2 spoons chives


Wash the asparagus, cut the wooden ends and peel towards the asparagus tips. Boil the asparagus, add some milk and salt, and remove the foam.
Meanwhile, boil the eggs, shell and chop them. Add the olive oil and the chives, and mix. If you like, add a teaspoon of mustard. Add the lemon juice, salt e mix.

Warm the butter and pour it on the asparagus.

As side dish, we propose boiled spring potatoes and homemade ham. While dandelion is perfect as decoration.
